Pancakes
pancakes are best eaten
with your own maple syrup
in late March
when there is deep snow on the ground
but the sun is already high in the sky
and the sap beginning to rise.
blend carefully the flour and eggs,
the milk and baking soda,
pour into a hot oiled pan,
watch for the bubbles,
turn with a deft flick of the wrist.
now you can open the last bottle
you filled and capped last April -
not as thick as it might have been
if you had boiled it for longer,
a slight aroma of wood smoke,
but sweet and golden brown
and tasting of spring.
you have the wood cut,
the spiles ready to hammer into the trees,
the buckets stacked and clean;
you are waiting for the wind to turn
into the south, flood winter
with gulf air.
you are dreaming of fudge and maple candy.
